HHW Chicken, Apple and Cranberry Salad

Here’s a fabulous salad for summer parties and family gatherings. Deliciously refreshing, crunchy and nutritious!

INGREDIENTS (Use only organic)

  • 1 bag of mixed lettuce and greens
  • 2 cups grape tomatoes (red, yellow or combined)
  • 1 large green apple
  • 1 cup seedless grapes (red or green)
  • 1 cup cranberries (dried in apple juice)
  • ½ medium red onion
  • 2-3 skinless chicken breasts
  • 1 cup raw, unsalted sunflower seeds
  • 1 cup raw, unsalted walnuts

PREPARATION

  • Bake or poach 2-3 skinless chicken breasts – allow to cool and cut into cubes
  • Thoroughly rinse and dry the lettuce, tomatoes, grapes (green or red), green apple, and red onion
  • Slice tomatoes and grapes in half
  • Core and thinly slice green apple
  • Peel and thinly slice red onion
  • Coarsely chop unsalted walnuts
  • In a large bowl combine all the ingredients
  • Pour dressing over salad and mix thoroughly
  • Garnish with large lettuce leaves

DRESSING

  • ½ cup apple cider vinegar
  • Juice of one whole lemon
  • 1 cup of olive oil
  • Pinch of salt, pepper and dried thyme
  • 1 tablespoon Stevia
  • Mix thoroughly in blender or food processor
  • Adjust ingredients to taste
