Artichoke and Roasted Pepper Hummus

  • 1 (15-ounce) can organic chickpeas/garbanzo beans
  • 1 cup artichoke hearts (in water not vinegar)
  • 1 small (4-ounce) can roasted red peppers
  • 1 cloves of fresh garlic
  • 2 tablespoons organic sesame tahini
  • 2 tablespoons fresh chopped cilantro
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon (to taste)
  • Salt and black pepper to taste

Combine all ingredients in food processor or blender and mix till smooth. Chill and serve with fresh vegetables such as celery, carrots, jicama, small peppers, or Persian cucumbers. Delicious!
