The Healed, Healthy and Whole Kitchen: Broccoli Salad

Broccoli is a wonder food! It helps alkalize the body, it’s full of vitamin C and antioxidants, and contains calcium and vitamin K that strengthen bones. It also reduces cholesterol and blood vessel inflammation to support cardiac health. Get all the benefits and wonderful flavors in this delicious raw broccoli salad. Enjoy!

Ingredients

  • 3 cups of chopped raw broccoli florets
  • 2 gloves of garlic
  • 2 tbs. of finely chopped fresh cilantro (coriander)
  • 1 yellow pepper
  • 6 ounces cherry or grape tomatoes
  • 1 tsp. of cumin seeds
  • 1 lemon
  • 1 teaspoon Himalayan salt
  • ¼ cup pine nuts
  • ¾ cup extra virgin olive oil

Preparation

  • Rinse and chop broccoli into tiny pieces
  • Mince 2 gloves of garlic
  • Finely chop cilantro
  • Chop yellow pepper into small pieces
  • Cut cherry tomatoes into halves
  • Zest the lemon, then cut in half, squeeze juice, and set aside
  • Mix together broccoli, salt, half of the lemon zest, cilantro, chopped peppers, and tomatoes
  • Heat the olive oil, add the minced garlic with cumin seeds and cook until fragrant but not smoking.
  • In a separate bowl, mix olive oil, garlic and cumin together with the pine nuts
  • Pour mixture over broccoli and toss well
  • Add splash of lemon juice to taste (optional)
  • Let marinate for at least one hour at room temperature (chill if you want to serve later)
