Ingredients
- 3 cups of chopped raw broccoli florets
- 2 gloves of garlic
- 2 tbs. of finely chopped fresh cilantro (coriander)
- 1 yellow pepper
- 6 ounces cherry or grape tomatoes
- 1 tsp. of cumin seeds
- 1 lemon
- 1 teaspoon Himalayan salt
- ¼ cup pine nuts
- ¾ cup extra virgin olive oil
Preparation
- Rinse and chop broccoli into tiny pieces
- Mince 2 gloves of garlic
- Finely chop cilantro
- Chop yellow pepper into small pieces
- Cut cherry tomatoes into halves
- Zest the lemon, then cut in half, squeeze juice, and set aside
- Mix together broccoli, salt, half of the lemon zest, cilantro, chopped peppers, and tomatoes
- Heat the olive oil, add the minced garlic with cumin seeds and cook until fragrant but not smoking.
- In a separate bowl, mix olive oil, garlic and cumin together with the pine nuts
- Pour mixture over broccoli and toss well
- Add splash of lemon juice to taste (optional)
- Let marinate for at least one hour at room temperature (chill if you want to serve later)
